• Manage all the kitchens and timely serve food in all areas such as restaurants/ banquets/ kitty halls/ lawns • Manage kitchen, service, store and cleaning staff. • Prepare menu planned as per established standards, procedures, • Manage storage, preparation and cooking of all food items, • Demonstrate and help maintain high levels of service that consistently exceeds the expectations of our customers • Plan menus and ensure uniform serving sizes and quality of food, • Manage and monitor food stocks and stock movement as well as Ensure minimum kitchen wastage. • Innovate, learn and record new recipes from time to time and make sure all menus are upto date. • Manage cleaning schedules for the kitchens and make sure that all areas are properly clean at all the time • Manage stock and make sure that stock is consumed/ rotated on time. • Manage timely maintenance of all the areas under his supervision • Manage compliance with the conditions of the food hygiene policies, • Plan and direct food preparation and culinary activities, • Estimate food requirements and food costing, • Comply with nutrition and sanitation regulations and safety standards • Maintain a positive and professional approach with coworkers
